Energy Economy - Food Matters Part 3


Well, you thought I was done, and so did I.  But, it turns out there is more to say on the subject of nourishing ourselves while coping with chronic illness.  Following are a few suggestions from readers. 

Stock up on healthy freezer meals.
  • Cook or do most of the prep work at your best time of day.  If your best time is just after waking up, try to put on a crock pot meal, or prep a dish so you can put it in the oven for dinner without having to do anymore work.  If your best time is at night you could get breakfast together and prep a crockpot meal so that you can just turn it on the next day.    Again, here is my pinterest board for inspiration.
  • Make more than you normally eat in one setting so you can have two or three meals from it and only cook once.
  • Cook in aluminum foil.  Makes clean up so much easier.  There are some great and very simple fish and chicken dishes that are good this way.
  • Cook two meals at once.  Example:  if your making tacos – make extra meat and go ahead and prep enchilada’s for later.
  • One reader comments that she stocks up on freezer meals when she is at a store that carries healthy options.  Then she is prepared for a few months.
  • If all else fails – order take out or send someone in your family to go pick up a pizza.  It’s not great to do this all the time (not great for your health or budget) but it’s a perfectly legitimate option occasionally.
Eating is one of those things we have to do several times everyday.  And of course, we want to eat as healthily as possible.  This can be a real issue for those dealing with ongoing illness.  I hope this  and parts one and two in this series have been at least a little helpful.  
Also, I found this website (specifically focusing on CFS, ME, and FM), which offers more suggestions for nourishing yourself, especially if you live alone and are bed-ridden.  It is a good site.

  1. I recently found an aluminum foil that has a parchment paper protection for the food.
